London’s Savoy to feed energy plant - with recycled food

LONDON’s Savoy Hotel is to ensure that a biomass-to-energy renewable plant will be the best-fed generator in the UK.

Kitchen waste, leftovers, peelings and used cooking oil will be recycled. The hotel expects the energy generated from this collaboration will power about 10pc of its lighting requirements.

Each week, a tonne of food waste will be sent to a biomass-to-energy renewable plant.

The Savoy aims to be the most eco-friendly hotel in London when it reopens in The Strand later this year.

The hotel, which has been used by stars such as Marilyn Monroe and Frank Sinatra, is carrying out a £100 million refurbishment programme. Other measures include recycling glass and supplying hot water to the hotel’s 263 rooms using heat emitted by the kitchens’ freezers and coolers.

“These innovations will reduce our carbon emissions by 3,332 tonnes a year, which is the equivalent of taking 1,500 cars off the road,” said the hotel’s environmental ambassador Debra Patterson.

“We are looking at recycling every part of the hotel’s operations — from the bath soap to leftovers.”

At first, the management was a little wary about going public with the food-waste scheme.

“We want customers to enjoy their food, and we were concerned that people may leave some of their meal in order to be green,” Ms Patterson said.
